Flavor pairings have moved emphatically from an art to a science, as more and more is learned about the molecules that create flavor and aroma and how they interact with each other. "The Flavor Matrix" presents elegant diagrams showing all the major (and minor) affinities that most common ingredients have, followed by a recipe for that ingredient featuring one of its natural flavor companions. The graphic design and photography are excellent, and the prose explains some of the how and the why, breaking down the compounds responsible for food’s taste and smell. There’s a lot of inspiration between these two covers.
