About this Recipe
This is a great method when you want something fast and easy (and don’t want to dirty another dish). Just add the ingredients in one bowl and toss! Here we use it with some peppery baby arugula leaves. The dressing plays well with its assertive flavors.
The Benefits
Arugula is a good source of calcium, critical for bone health. It also provides fiber and potassium, along with vitamins A, C, K, and folate (a B vitamin). Vegetables in the brassica family, like arugula, are a good bet for health-protecting properties.
Ingredients
2 to 4 SERVES
- 4 cups (80 g) baby arugula
- 2 to 3 Tbsp (30 to 45 ml) lime juice
- 1 to 2 Tbsp (15 to 30 ml) toasted sesame oil
- 1 tsp minced ginger
- 1/2 tsp minced garlic
- Salt to taste

Put the arugula in a serving bowl, add the lime juice, sesame oil, minced ginger, minced garlic, and salt. Toss well to combine. Serve immediately.
