JL Fields is a great example of RoundGlass Living’s ethos of transforming your life. At the age of 45, she made the decision to stick with a plant-based pathway of cooking and eating — and a rewarding career followed suit. She has written several cookbooks, including The Complete Plant-Based Diet and Vegan Meal Prep, but the books represent a small portion of JL’s prodigious output and tireless activity. She is a chef, a National Board-certified Health and Wellness Coach, and a consultant to a range of wellness brands. Based in Colorado, where she lives with her husband, Dave, JL is also the founder and culinary director of the Colorado Springs Vegan Cooking Academy.
